Sweet & Spicy Poached Egg Smash

AKA: The High-Fibre Breakfast That Slaps

When I’m feeling semi-functional and my recovery playlist is on repeat, this is what I eat.

It’s warm, sweet, spicy, high-fibre, and gives off “I’m thriving… but I could still fight someone” energy.

This is what I make when I feel brave enough to poach eggs instead of letting life poach me.
(And when I’m not? I scramble them. Because the universe can’t ruin your eggs if you’ve already pre-sabotaged them.)

You’ll Need:

  • 🥚 2 medium eggs (poached if you’re bold, scrambled if you’re realistic)
  • 🥑 Smashed avocado (no measurements, just vibes)
  • 🍞 High-fibre bread (I use Waitrose dark rye & wheat sourdough because I’m posh in trauma recovery)
  • 🍓 100g of strawberries (yes, on the eggs—don’t question the genius)
  • ❄️ Optional handful of pomegranate seeds (for texture and dramatic flair)
  • 🔥 Sriracha, obviously. Life needs spice.

Nutrition:

465 calories / 21g protein / 11.4g fibre

Why I’m Obsessed With It:

Poached eggs = “I’ve got my shit together” energy, even if it’s just pretend

Strawberries = secret fibre overlords (3.8g per 100g, and barely any calories)

Avocado = creamy good fat comfort

Hot sauce = chaos control

If I don’t have any avocado, then I’ll go with just the poached eggs, or make scrambled eggs instead. Scrambled eggs are far less hassle, and it’s easier to have that additional protein boost by chucking another egg in.

How to Make It:

  1. Poach or scramble your eggs. You are the master of your emotional bandwidth.
  2. Toast your fancy high-fibre bread until it’s sturdy enough to carry your hope.
  3. Smash up the avo with salt, pepper, and optional lemon because we’re not animals.
  4. Stack: toast → avo → eggs → strawberries → Sriracha drizzle → pomegranates (if you’re feeling extra).
  5. Eat. Feel powerful. Maybe cry a little, but like… in a cathartic way.

Mood: Nourished, but still watching for red flags.
